Gail Wilson began her career as a cake decorator for a local grocery store. During those years she developed and fine-tuned her unique decorating style that is the keystone of the Cake Shop “look”. Self-taught in the basics of color and design, she moved on to share her knowledge by teaching “Beginning Cake Decorating” for Florida Community College of Jacksonville’s Community Education Program.  In the mid 90’s she enrolled in the Institute of the South Culinary Education program and it was during her internship at Happy Chefs Restaurant that she met Anna. The two found that they enjoyed working as a team and founded The Bakery at Happy Chefs in 2000. Inspired by this success, the two opened The Cake Shop of San Jose in October 2001. Married to Deacon Robert L. Wilson, Sr., Gail divides her time between The Cake Shop, her family and her church.

Linda Pickus’ first job in the food industry was at a fast food restaurant chain in Pittsburgh. Heeding her parents’ advice, she took a job in a deli/catering business before enrolling in culinary school. That year provided the stimulation and interest to convince her that this was the career path for her. Seven years ago she enrolled and completed her degree in Culinary Arts from the Florida Community College of Jacksonville’s Institute of the South. She worked for Ruth’s Chris, The River Club, Marsh Landing Country Club and Publix before joining The Cake Shop in 2005. Linda’s expertise as a pastry chef is evident in the Cake Shop creations she prepares. Passionate about the art of cake design, she is rapidly becoming an expert in the art of fondant and gumpaste creations. Linda also serves as the Cake Shop’s operations manager.

Anna DeLoach turned her life-long passion for baking into a successful endeavor through her partnership with Gail. Retired from her career as a mainframe computer operating systems programmer and consultant in 1993, she traded her keyboard for a mixer and studied under Chef Sherri Myers, owner of the Pastry Studio in Daytona Beach. Anna opened and ran the bakery department at Happy Chef’s Restaurant from 1997 until 2000. She researched and developed all of the Cake Shop’s current recipes. Anna also wrote the curriculums for and taught several very successful classes for Williams Sonoma’s guest chef series.  Anna divides her time between The Cake Shop and working as Research Assistant for her husband, author and photographer Ned DeLoach.
