Gail
Wilson
began her
career as a cake decorator for a local grocery store. During those
years she developed and fine-tuned her unique decorating style that
is the keystone of the Cake Shop “look”. Self-taught in the basics
of color and design, she moved on to share her knowledge by teaching
“Beginning Cake Decorating” for
Florida Community College of Jacksonville’s Community Education
Program. In the mid 90’s she enrolled in the Institute of the South
Culinary Education program and it was during her internship at Happy
Chefs Restaurant that she met Anna. The two found that they enjoyed
working as a team and founded The Bakery at Happy Chefs in 2000.
Inspired by this success, the two opened The Cake Shop of San Jose
in October 2001. Married to Deacon Robert L. Wilson, Sr., Gail
divides her time between The Cake Shop, her family and her church. |

Bill
Schneider
is a Colorado Native who spent many years
there as a professional floral designer and
horticulturist. After moving to Florida in 2001, he decided to turn
his passion for baking and his hobby of cake decorating into a
second career. A brief stint in a
local grocery store bakery department propelled him into the more
intimate world of artisan baking and he joined the Cake Shop as both
baker and cake designer. Bill’s extensive knowledge of floral work
has carried over to the creation of gum paste flowers that are so
realistic, they are often mistaken for the real thing! His talent
has added a new dimension to the Cake Shop’s custom cake line. Now
Bill works in cake design as a career and has turned his former
horticultural work into a hobby, cultivating over 100 varieties of
plants in his home greenhouse. |
